1 tablespoon butter 1 medium onion (finely chopped) 1 clove garlic (finely chopped) 1 bunch fresh spinach leaves 1/4 cup water 1/2 cup milk 1/2 teaspoon pepper 1/2 teaspoon sugar 1 tablespoon corn flour 1 teaspoon fresh cream to taste Salt accordingly


In a large saucepan, saute onion and leeks in butter over medium heat. Add water and bouillon cubes and let it boil for a while. Reduce heat to low, cover, until vegetables are tender, at least 20 minutes. Then cook for another 2 to 4 minutes. In a blender, puree all the soup mixture and pour back into the pan, stirring slowly and adding salt and pepper to taste. Simmer on low until simmering. Add cream and butter and beat well again. Garnish with fresh cream on top and serve the soup hot.
